Вплив хлороформу на стан води, адсорбованої сироватковим альбуміном

Abstract

Методом 1Н ЯМР спектроскопії з виморожуванням рідкої фази вивчено будову гідратної оболонки ліофілізованого і сорбованого на поверхні високодисперсного кремнезему сироват­кового альбуміну людини, що знаходиться в слабополярному розчиннику (хлороформі) або при його додаванні до гідратованої системи. Показано, що вплив хлороформу може спри­чинювати зміну об'ємів внутрішніх областей білкової глобули, які характеризуються різною гідрофільністю і заповнених структурованою водою, що не замерзає за температури Т < 273 К.
