Abstract
Extracts of the yeast components and the model mixtures of the glutelins and nucleic acids have been investigated in the paper. It is shown that hydrophobic bonds play a main role in the interaction between the nucleic acids and proteins. The haotrophic salts should be in the system to avoid the coprecipitation of the proteins and nucleic acids at the isoelectric point. Another way is to hydrolyze the nucleic acids to the oligonucleotides with the molecular mass of 800 – 1000 dalton and to transform them to the «hydrophilic» state due to separation of purine bases. The most convenient method for it is an acid treatment.
